外觀：白色晶體
甘露糖6位的一個羥基被氫取代的衍生物，即6-脫氧-L-甘露糖。又稱甲基戊糖。和墨角藻糖并列的典型6—脫氧己糖的一種。是甘露糖的第6位脫氧，最后變成—CH3的化合物，天然分布的是L型，也有稱為6—脫氧—L—甘露糖（6－de－oxy－L－mannose）的。

在細菌和植物中分布最廣，在細菌中以鼠李糖為組成糖的多糖或脂多糖存在于細胞表面。此糖鏈結構多成為抗原特異性因子。在植物中漆樹（Rhus toxicodendron）的葉和花中除以游離糖形態存在外，也以蕓香苷等各種糖苷、阿拉伯樹膠等多糖的組成糖等形態分布。 [1]

作為一種微量糖而廣泛分布于植物中。可以結合糖的形式存在于很多種植物甙（如槲皮甙、異橙皮甙等）、多糖、特別是果膠和膠質中，亦可存在于漆樹毒素中。
細菌細胞中由葡萄糖生物合成鼠李糖的途經是：α—葡萄糖—1—磷酸→dTOP－D—葡萄糖→dTDP－4—酮—6—脫氧—D—葡萄糖→dTDP－4—酌—L—鼠李糖→dTDP－L—鼠李糖，最終產物糖核苷酸由各特異的鼠李糖基轉移酶的作用，其鼠李糖殘基參入糖苷和多糖。 [1]

物理性質
純品鼠李糖為無色結晶性粉末，能溶于水和甲醇，微溶于乙醇，其結晶呈兩種形式，α 型和β 型。α 型含有一分子結晶水，加熱后失去結晶水，轉變為β 型(分子量為164.16)；β 型極易吸濕，在空氣中吸潮轉變為α 型。常見的為α-L-鼠李糖，其分子量為182.11。
在通常的條件下得a-L-鼠李糖一水合物結晶，片狀晶體，熔點82～92℃，比旋光度－7.7°→+8.9°，溶于水和乙醇；β-L-鼠李糖（無水）為針狀晶體有吸濕性，熔點122～126℃，+38.4°→+8.9°，溶于水和乙醇。有甜味，在水溶液中以吡喃形式存在。 [1]
化學性質
有還原性，用溴水氧化生成鼠李酸，經硝酸氧化生成L-阿拉伯三羥戈二酸。用鈉汞齊還原則得鼠李糖醇。

鼠李糖可用來測定腸道的滲透性，可用作甜味劑，還可用于生產香精香料，可食用。
