化學性質

有順式和反式兩種異構體。反式呈無色或微黃色長型細小針狀結晶，有類似風信子與膏香香氣，有甜味，熔點33℃(純品低于24℃)，沸點258℃，閃點126℃，相對密度：(d35)1．0338；(d20)1.044，折射率(nD22)1.5819，市售商品，主要是指反式異構體。順式者為無色液體，有高度折光性，沸點127℃(1333Pa)，相對密度(d22)1.041，折射率(nD25)1.5710。置空氣中逐漸氧化成桂醛。溶于乙醇、丙二醇和大多數非揮發性油，難溶于水和石油醚，不溶于甘油和非揮發性油。天燃品以酯的形式存在于秘魯香脂、肉桂葉、風信子油及蘇合香脂等中。

用途

GB2760—96規定為暫時允許使用的食用香料。主要用于杏、桃、樹莓、李等型香精。

桂醇是我國《食品添加劑使用衛生標準》規定暫時允許使用的食品香料，主要用于配制草莓、檸檬、杏、桃等水果型食用香精和白蘭地酒用香精。在口香糖中使用量為720mg/kg；烘烤食品中33mg/kg；糖果中17mg/kg；軟飲料中8.8mg/kg；冷飲中8.7mg/kg；酒類5.0mg/kg。

用途

香料；定香劑；防腐劑；脫臭劑。

用途

有溫和、長久而舒適的香氣，香味優雅，且有定香力，應用于化妝品、香精及香皂香精中。常與苯乙醛共用，是調制洋水仙香精、玫瑰香精等不可缺少的香料。

生產方法

肉Chemicalbook桂醇以酯的形式存于天燃的蘇合油、秘魯香膠和肉桂油中，加入適量的10%苛性堿溶液，經加熱即可制得。合成肉桂醇的方法較多。桂酸肉桂酯在堿性介質中皂化，可獲得質量很好的肉桂醇；由肉桂醇醛經異丙烯基鋁還原，能以73%的收率得到肉桂醇；當用芐醇鋁還原肉桂醛時，會同時蒸出生成苯甲醛而獲得肉桂醇，經減壓蒸餾得到成品，用這種方法還原肉桂醛，不會觸及側鏈的雙鍵。

生產方法

桂醛還原法在1份質量的芐醇中加入0.01份鋁屑，加熱至60℃反應放出氫氣，溫度升高至180℃，至停止放出氫氣為止。芐醇鋁溶液經冷卻、過濾后加入到芐醇和桂醛的混合物(質量1：1)中。在0.0027MPa的條件下加熱至沸，在80℃和回流比3～4下蒸出反應生成的苯甲醛，同時補加芐醇。直到蒸出理論量95%的苯甲醛后停止加料，并蒸出剩余的芐醇，然后蒸出肉桂醇粗品。再經減壓精餾，收集117℃(7kPa)餾分，即為產品。蘇合香脂皂化法桂醇以桂酸桂酯的形式天燃存在于秘魯香脂、安息香脂和蘇合香脂中。將蘇合香脂在10%的氫氧化鈉溶液中加熱皂化5h，再用乙謎萃取出水解產物桂醇，后經減壓蒸餾提純而得成品。

生產方法

將含有桂酸桂酯的蘇合香脂在等量的10%苛性鈉溶液中皂化5h，得水解產物桂醇和桂酸再用乙謎提出桂醇并經減壓蒸餾提純而得。溶桂醛于異丙醇中，用異丙醇鋁催化，在70～80℃下進行分餾，還原餾出物即為粗品，再蒸去異丙醇和減壓蒸餾、凈化，即得純品。
