丙酮酸是一種酸性較弱的有機酸, 分子中同時具有羰基和羧基兩個官能團, 它除具有羧酸和酮的性質外, 還具有α- 酮酸的性質, 是最簡單的α- 酮酸(屬于羰基酸)。丙酮酸是體內產生的三碳酮酸, 它是糖酵解途徑的最終產物, 在細胞漿中還原成乳酸供能, 或進入線粒體內氧化生成乙酰CoA, 進入三羧酸循環, 被氧化成二氧化碳和水, 完成葡萄糖的有氧氧化供能過程。丙酮酸還可通過乙酰CoA 和三羧酸循環實現體內糖、脂肪和氨基酸間的相互轉化, 因此, 丙酮酸在三大營養物質的代謝聯系中起著重要的樞紐作用 [1] 。
抗氧化作用
有研究已表明, 丙酮酸能抑制鼠體內氧自由基的氧化作用, 同時作為一種過氧化氫清除劑, 具有防止自由基損傷的作用, 已在心臟再灌注損傷和急性腎衰竭中證實具有保護機體抗功能性損傷。丙酮酸可通過兩種機制起到抗氧化作用: 其一, 作為一種α- 酮酸, 丙酮酸可直接通過非酶促的去碳酸基反應抑制過氧化氫; 其二,補充丙酮酸可增強檸檬酸循環, 檸檬酸產生增多后, 抑制磷酸果糖激酶, 從而進入磷酸戊糖旁路, 產生還原型輔酶Ⅱ(NADPH) , 從而間接地增加谷胱甘肽(GSH) 抗氧化系統的能力。丙酮酸還可增加輔酶Ⅰ/ 還原型輔酶Ⅰ(NAD+/NADH) 的比值, 促進三羧酸循環反應。 [2]
