應用
與L-抗壞血酸相同。在不適宜添加酸性物質的食品中可使用本品，例如牛乳等制品。另外，對予肉制品還可以作為發色助劑，同時可以保持肉的風味、增加肉制品的彈性。據一些研究證明，抗壞血酸、抗壞血酸鈉對阻止亞硝酸鹽在肉制品中產生有致癌作用的二甲基亞硝胺具有很大意義。其添加量為0.5%左右 [1] 。
